Peanut Butter Cookies

So, I'm trying to lose weight but for some reason thought it would be smart to make peanut butter cookies. 
Me= dumb.
But they were so very delicious. And extremely easy to make.

I took the pictures with my phone so excuse the bad quality.

Ingredients:

1 cup peanut butter (I used two different brands because I didn't have enough)
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 teaspoon baking soda
1 pinch salt
1/2 teaspoon vanilla extract

 Directions:

  
1. First, preheat oven to 350. In a bowl, stir together the peanut butter and sugar together until well mixed. I just used a fork but you can use a mixer if you want.

 2. Add the egg and mix well into the peanut butter/sugar mix.


3. Add the baking soda, salt, and vanilla and mix.

4. Roll into 1 inch balls and put on greased cookie sheet. Then flatten with a fork. To prevent stickiness, stick the fork in some sugar each time you flatten. Then stick in the oven and bake for 8-10 minutes. Or until the bottoms start turning brown.

5. Let cool for a few minutes, then put on cooling rack to cool completely.

Quick N' Easy Ravioli dinner

This is something very easy to make when you don't have a lot of time to make dindin. Which I really don't because I have to rush around, clean dishes, make dinner, make baby dinner, feed me, feed baby, bathe baby, then dress baby in pj's then feed baby booby then burp baby and put to bed. AHH! It's hectic, so most of the time, I'm trying to find easy ways to prep dinner.
All you need for this is:
-Can tomato sauce
-Can diced tomatoes
-Cheddar cheese
-Frozen Ravioli
-And any seasoning you like.
I almost always use: 
-Garlic powder
-Onion powder
-Italian seasoning
-Salt and pepper

Just mix everything in a baking dish. Put oven to 350 and bake for 30-40 minutes, or until it's nice and bubbly and the cheese is melted.




Serve with some veggies and voila!

Fruit and Yogurt Parfaits.

This was very easy. Just get some fresh fruit and clean and cut. Then some low fat vanilla yogurt and granola. Easy, peasy.


Homemade cinnamon rolls

Using the same dough as for bread, I ended up making cinnamon rolls. I rolled out the dough and spread some melted butter on top.
Then I mixed cinnamon and brown sugar together and sprinkled that on top.
Just roll it into a log then cut it into 2 inch pieces, spread out on a baking pan then bake.
I topped them with some homemade cream cheese frosting.
They were very good except next time I will not be so stingy on the brown sugar/cinnamon spread.


My attempts at making bread from scratch...

My first attempt at making bread was pretty successful except I didn't have the right utensils and didn't follow one part of the instruction. I didn't knead the dough nearly as much as I needed to and I didn't have a bread baking pan. I just used an oven dish.
 
  See? It fell apart as I was taking it out. But I'm blaming it on not using the right tools. :)   


We still managed to enjoy it though!
 
 My second time around, It came out perfect! I was so proud.  


I got the recipes from allrecipes.com. It has always been my go-to place for new recipes.

Back in April 2012...

I made sugar cookies and dulce de leche.
Put them together and it's delicious!
